Complex, intense, sophisticated.
It's been four years since I last sampled this Pinot Noir and Chardy blended fizz from Haywire, and its profile has changed dramatically -- it's evolved from sassy to complex.
This vintage leads with warm apple turnovers, dried pears, roasted hazelnuts and a hint of smoke. The palate is tangy yet creamy with an undeniable leesy character. Overall, great intensity with a firm mousse and a long lemony finish.
